By Sanjeev Kapoor 22 Mar 2016 in Recipes Course New Update Main Ingredients Pistachios, Refined Flour Cuisine Indian Course Mithais Prep Time 6-10 minutes Cook time 31-40 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Veg Ingredients list for Pista Surprise 1/4 cup + for garnishing Pistachios 2 cups Refined Flour 2 tablespoons Ghee 1 tablespoon Sugar 1 Lemon for deep-frying Oil Icing sugar to dusting Method Knead together refined flour and ghee with sufficient water into a stiff dough. Cover with cling film and set aside for ten to fifteen minutes. Heat a non-stick pan, add sugar and two cups of water and stir sugar melts. Roughly chop pistachios. Squeeze lemon juice to the sugar syrup and mix well Divide dough into eight equal portions and shape them into balls. Roll out into circular discs and cut into rectangles. Take some water in a bowl. Place some pistachios in the center of a rectangle and roll into a cigar. Dampen the open edge and press lightly to seal. Heat sufficient oil in a kadai. Remove the sugar syrup from heat and set aside. Deep-fry the cigars in hot oil till golden. Drain on absorbent paper. Soak the fried cigars in the sugar syrup for one to two minutes. Drain and place on a serving plate. Dust icing sugar on top of the cigars and garnish with some pistachios and serve.
