Prawn Omlette This delicious combination of prawns and eggs make for a satiating breakfast This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 05 Apr 2021 in Recipes Non Veg New Update Main Ingredients Medium prawns, Eggs Cuisine Fusion Course Snacks and Starters Prep Time 26-30 minutes Cook time 21-25 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Non Veg Ingredients list for Prawn Omlette 20-24 Medium prawns shelled, deveined and washed 4 Eggs to taste Salt 2 tablespoons Oil 2-3 Green chillies chopped 1 Medium onion chopped 1 Medium tomato chopped 1/2 teaspoon Turmeric powder 1 teaspoon Red chilli powder 6-8 Button mushrooms chopped 3-4 tablespoons Fresh coriander leaves chopped 3-4 tablespoons Processed cheese grated to serve Bread slices toasted Method For each portion break 2 eggs into a bowl, add salt and whisk well with a fork. Heat 1 tbsp oil in a non-stick pan, add half the green chillies, half the onion and half the tomato, mix and saute for 1-2 minutes. Add salt, ¼ tsp turmeric powder and ½ tsp red chilli powder and mix well. Add half the prawns, mix and sauté for 1-2 minutes. Add half the mushrooms, mix well and cook for 1-2 minute. Spread this mixture evenly and pour the eggs over them. Sprinkle half the coriander leaves and half cheese. Cover and cook for 2-3 minutes. Loosen the edges and fold the omelette in half. Halve the omelette and slide each half onto a serving plate. Serve hot with toasted bread slices.
