Besan chillas stuffed with cheese and khari boondi mixture

Besan Ke Pude

Main Ingredients

Gram flour (besan), Asafoetida

  • Gram flour (besan)
    3 cups
  • Asafoetida
    a pinch
  • Turmeric powder
    1/2 teaspoons
  • Ginger-garlic-green chilli paste
    1 tablespoons
  • Buttermilk
    2-3 cups
  • Salt
    to taste
  • Cheese, grated
    1 cup
  • Boondi
    1 cup
  • Fresh coriander leaves
    2 tablespoons
  • Paneer (cottage cheese) grated
    1 cup
  • Oil
    to cook


Step 1

Heat a non stick tawa.

Step 2

Mix together gram flour, asafoetida, turmeric powder, ginger-garlic-green chilli paste in a bowl. Add buttermilk and salt and mix well to make a smooth batter of pouring consistency.f

Step 3

Mix together cheese, khari boondi and coriander leaves in another bowl. Add paneer and mix well.

Step 4

For each puda spread ½ tsp oil on the hot tawa. Put a ladleful of batter and spread it to a thin puda.

Step 5

Spread some of the cheese mixture over it. Drizzle 1 tsp oil on all sides and cook till the underside is golden.

Step 6

Roll the puda, transfer into a serving plate and serve hot.
