Paya Soup

500 grams mutton mince
2 lamb trotters
1 small packet of stock seasoning
For faster preparation
Prepare stiff dough for kachori with refined flour, salt and ghee. Chop the onions, chillies, ginger and garlic. Make the stuffing for kachori and then stuff it in the dough and set aside. Cut the trotters in ½ inch pieces and clean them thoroughly. For pulao make the green masala paste and set aside. Prepare the mixture for koftas and shape them into small balls. Soak the rice.
How to go about it
Start with the paya soup by sautéing garlic and ginger in a pressure cooker and then adding whole spices to it. Add trotters and sauté until golden brown in colour. Add water and cook till the pressure releases to 3 whistles. Strain the soup and set aside the trotters to serve with soup. Then finish the pulao.Deep fry the kachori to golden brown colour on medium heat.
