Shopping list
1 kg Basmati rice
1 tin pineapple slices
1 green capsicum
1 yellow capsicum
1 red capsicum
1 packet roasted peanuts
1 packet green curry paste
20 grams Thai red bird chillies
20 grams kaffir lime leaves
1 packet brown sugar
50 grams basil leaves
500 grams fish fillet
1 bottle crushed black peppercorns
1 bottle paprika powder
1 medium watermelon
1 bottle Tabasco sauce
1 bunch mint leaves
For faster preparation
Process the watermelon and ginger. Blend all the ingredients of soup till smooth and strain. Refrigerate till chilled. Blend together half the garlic, green chillies along with lemon juice till smooth and marinate the fish with it. Also to it add chutney, crushed black peppercorns, paprika powder, refined flour and salt, mix well and set aside. Process all the vegetables and cook the rice for the fried rice.
How to go about it
Serve the soup into individual glasses and serve chilled garnish with mint sprigs. Heat oil in a pan, add remaining crushed garlic and marinated fish pieces and fry till golden brown on both the sides. Serve hot. Heat oil in another pan and toss all the vegetables, spices and rice. Toss well and serve hot.
