Mexican special

Menu: What is the most common impression about Mexican food? That it is hot and wholesome and has many similarities with Indian food. And like Indian cuisine, Mexican is not one single cuisine but many. Try out preparing a Mexican theme based meal with dishes like Spicy Mexican Salad, something Mexican like in your breakfast with the Breakfast Rolls and end with a Mexican Fried Rice.


Shopping list

1 kg Basmati rice
2 carrots
1 bottle red chilli sauce
1 red capsicum
1 yellow capsicum
1 bottle jalapenos
1 bottle dried mixed herbs
1 packet corn chips
200 grams corn kernels
1 cup kidney beans
2 green capsicums
1 bottle hot and sweet sauce
1 medium iceberg lettuce
1 packet corn chips
1 packet tortilla
1 packet silken tofu
1 packet grated cheese
Few sprigs of parsley
1 bottle red chilli sauce

For faster preparation
Boil the rice. Boil the kidney beans and slice the onions, jalapenos, red and yellow capsicums and coriander for the salad. Grate the tofu, cut juliennes of green capsicum for the rolls.

How to go about it
Toss the vegetables, spices, herbs with rice and make it ready. Toss the kidney beans alongwith onions, lemon juice, salt and mix well. Top with corn chips and serve. Sauté the onions with spices, tofu and capsicum for the rolls. Place the prepared mixture into the tortillas, sprinkle some chaat masala and roll them. Serve.
