Menu:
One Pot Chicken and Lemon Rice
Shopping list
1 small packet of shimeji mushrooms
1 packet of button mushrooms
1 stick of celery
50 grams of French beans
1 packet of vegetable stock cubes
1 small bunch of spinach
4 chicken thighs
1 small packet of fresh oregano
1 small bottle of olive oil
1 small packet of chicken stock cubes
1 small packet of parsley
100 grams of green grapes
100 grams of black grapes
100 grams of strawberries
100 grams of almonds
1 small packet of cinnamon powder
50 ml of honey
250 grams of jowar flour
100 grams of oats
For faster preparation
For soup, cut shimeji mushrooms, wash and slice button mushrooms, chop celery, string and chop the beans, clean and shred spinach. Make vegetable stock by adding stock cubes to warm water. Chop garlic and shallow fry it till golden brown in colour. Reserve the oil, set aside. Clean and wash the chicken thighs. Marinate it with lemon zest, lemon juice, chopped oregano, chopped garlic and salt. Wash and soak the rice. Halve the grapes. Chop the strawberries and sliver the almonds.
How to go about it
Start with the chicken. Then the crumble, by adding fruits and honey to a baking dish then top it up with oats and flour mixture. Sprinkle almond slivers and bake then for the soup sauté celery and beans in reserved oil, then add mushrooms and fried garlic, cook for few minutes. Then add stock and finally spinach and seasoning. Serve.
