Ingredients list for Almond Cake

  • 1 cup + for dusting Almond flour
  • 1/2 cup + for greasing Butter
  • 3/4 cup Castor sugar
  • 3 Eggs
  • 2 tbsps + for dusting Cornflour
  • 1 teaspoon Baking powder
  • 1 teaspoon Vanilla essence
  • 1/2 cup Roasted walnuts , chopped
  • for deep-frying Icing sugar
  • for garnish Fresh mint sprig
  • to serve Fresh mixed berries

Method

  1. Preheat oven to 180˚C. Grease a cake tin with butter and dust with almond flour.
  2. Take butter and sugar in a bowl and cream together with an electric beater till fluffy.
  3. Break the eggs one at a time and add and continue to beat till well combined. Add almond flour, cornflour, baking powder and vanilla essence and mix well.
  4. Fold in the walnuts into the mixture. Pour the mixture into the greased cake tin, place the tin in the preheated oven and bake for 40-45 minutes.
  5. Remove the cake tin from the oven and let it cool before demoulding.
  6. Cut into wedges and place them on a serving plate, dust with icing sugar and garnish with mint sprig. Serve with mixed berries.
