Aloo Gobhi Methi

This cauliflower and potato preparation is very simple but there is no dearth of taste in it. Best served with chapatis/ phulkas. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 2 medium potatoes, cut into wedges
  • 1 small cauliflower, cut into florets
  • 1 cup finely chopped fresh fenugreek (methi) 
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • ½ teaspoon asafoetida
  • 1 inch ginger, cut into strips
  • 2 green chillies, slit
  • ½ teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • 1 teaspoon chaat masala
  • Salt to taste

Method

  1. Heat one tablespoon oil in a non-stick pan; add cumin seeds and asafoetida. When the seeds begin to change colour, add ginger, green chilli and sauté for one minute. Add potatoes. Cover and cook for 3 minutes
  2. Add cauliflower florets, sprinkle around two tablespoons of water and cook for 5 minutes.
  3. Add red chilli powder, coriander powder, chaat masala, salt and methi. Mix well.
