Aloo Puri

Ingredients

  • 3 medium potatoes, boiled, peeled and grated
  • ½ cup refined flour (maida)
  • ½ cup whole wheat flour 
  • Salt to taste
  • ½ teaspoon carom seeds (ajwain)
  • 1 tablespoon oil + to deep fry
  • Subzi for serving

Method

  1. In a parat, add the potatoes, salt, carom seeds (ajwain), whole wheat flour, and refined flour. Mix well. Add 1 tablespoon oil; knead to semi soft dough. Keep aside for 5 minutes.
  2. Divide the dough into equal portions, shape into a ball. Apply a little oil on the surface and place the dough ball. Roll it into a circle, keep aside. 
  3. Heat oil in a non-stick pan, gently add the prepared puris and fry till golden brown and crisp. Transfer on an absorbent paper.
  4. Serve hot along with favourite subzi.
