Aloo Tarkari

Ingredients 

  • 3 large potatoes, peeled and cut into 1/2 inch pieces
  • 2 tablespoons mustard oil
  • 1 1/2 teaspoons panch phoran
  • 2 dried red chillies
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon cumin powder
  • Salt to taste
  • 1/2 teaspoon sugar

Method

  1. Heat mustard oil in a non-stick pan, add panch phoran and let the seeds splutter. Break the dried red chillies and add them to the pan. Add the potatoes and saute well.
  2. Add turmeric powder, saute and cook for 3-4 minutes. Add red chilli powder, cumin powder, and saute well. Cook for 2-3 minutes.
  3. Add salt, sugar and 2 cups of water, mix well. Cover and cook till the potatoes are completely cooked.
  4. Serve hot.
