Ingredients list for Amla Mojito

  • 5 Indian gooseberries (amla)
  • 1/2 cup Sugar
  • as required Ice cubes
  • 8 Lemon , cut into wedges
  • 20-25 Fresh mint leaves
  • 12 tablespoon White rum
  • for basting Drinking soda
  • to garnish Fresh mint sprigs

Method

  1. Cut 3 amlas into wedges and finely chop the remaining 2.
  2. To make the amla juice, put the amla wedges in a blender jar, add ⅓ cup water and blend to a smooth mixture. Strain this through a muslin cloth into a bowl and refrigerate till well chilled.
  3. To make the sugar syrup, heat a non-stick pan, add sugar, 1 cup water and the chopped amlas and mix well. Cook till sugar melts and amlas become soft.
  4. Take the pan off the heat, cool down to room temperature and refrigerate the sugar syrup till chilled.
  5. To make one portion, put 2 lemon wedges in a serving glass, and add 5-6 mint leaves and muddle well.
  6. Fill the glass with ice cubes, pour 2 tbsps amla juice, 3 tbsps sugar syrup and 3 tbsps white rum.
  7. Top it up with drinking soda, garnish with mint sprig and serve immediately.
