Ingredients
- 1 medium red apple
- 1 medium green apple
- 12-16 California walnut kernels
- 1/2 cup yogurt
- 2 tablespoons grainy mustard
- Salt to taste
- Crushed black peppercorns to taste
- 2 tablespoons olive oil
- 5-6 tablespoons shredded green cabbage
- 5-6 tablespoons shredded Purple cabbage
- 4 tablespoons carrot strips
- 4 tablespoons pink radish strips
- 2 tablespoons chopped celery
- 2 tablespoons dried cranberries
Method
- Slice the apples thinly and set aside.
- Mix together yogurt, grainy mustard, salt, crushed peppercorns and olive oil in a bowl.
- Add cabbage, purple cabbage, carrot, radish, celery, cranberries, sliced apples and walnuts and mix well.
- Transfer into a serving bowl and serve immediately.
