Ingredients

  • 1 medium red apple
  • 1 medium green apple
  • 12-16 California walnut kernels
  • 1/2 cup yogurt
  • 2 tablespoons grainy mustard
  • Salt to taste
  • Crushed black peppercorns to taste 
  • 2 tablespoons olive oil
  • 5-6 tablespoons shredded green cabbage 
  • 5-6 tablespoons shredded Purple cabbage 
  • 4 tablespoons carrot strips
  • 4 tablespoons pink radish strips
  • 2 tablespoons chopped celery 
  • 2 tablespoons dried cranberries

Method

  1. Slice the apples thinly and set aside.
  2. Mix together yogurt, grainy mustard, salt, crushed peppercorns and olive oil in a bowl.
  3. Add cabbage, purple cabbage, carrot, radish, celery, cranberries, sliced apples and walnuts and mix well.
  4. Transfer into a serving bowl and serve immediately.
