Ingredients for Apricot Praline Recipe

  • Apricot jam 42 grams

  • Butter 64 grams

  • Castor sugar (caster sugar) 2 tablespo for sprinkling

  • Liquid glucose 18 grams

  • Milk chocolate , melted 114 grams

  • Cocoa butter 7 grams

  • Brandy 2 teaspoons

  • Dark chocolate , melted 1 cup

Method

Step 1

Take butter in a bowl, add 2 tablespoons castor sugar and beat with an electric beater till light.

Step 2

Add liquid glucose and beat. Add apricot jam and beat well till mixture turns light and fluffy.

Step 3

Add melted milk chocolate and cocoa butter and continue to beat. Add brandy and beat well.

Step 4

Fill a piping bag with the chocolate mixture and keep it in the refrigerator for 2-3 minutes to set or let it set at room temperature for 10-12 minutes.

Step 5

Pipe out the chocolate mixture into small portions on a baking tray, keeping a distance between each portion, and refrigerate for 4-5 minutes or till set.

Step 6

Take the tray out of the refrigerator and shape each portion into a ball. Dip each ball in melted dark chocolate, place on the same tray. Sprinkle some castor sugar on top and refrigerate for 2-3 minutes to set.

Step 7

Transfer them into a serving bowl and serve.
