Baby Spinach and Strawberry Salad

A refreshing spinach and strawberry salad with a tangy red wine vinaigrette, topped with crunchy hazelnuts. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 12-16 baby spinach leaves
  • 6-8 strawberries, hulled
  • 2 tablespoons red wine vinegar
  • Salt to taste
  • 1 teaspoon crushed black peppercorns
  • 2 tablespoons olive oil
  • Hazelnuts for garnishing

Method

  1. Refresh baby spinach leaves by placing them in a bowl with iced water for 10 minutes.
  2. Put red wine vinegar, salt, crushed peppercorns and olive oil in a bowl and whisk well.
  3. Halve strawberries and add to the bowl. Refrigerate for 10-15 minutes.
  4. Drain spinach leaves and add to chilled strawberries. Toss well.
  5. Serve chilled garnished with hazelnuts.
