Ingredients list for Bagel - SK Khazana

  • 3 cups Refined flour (maida)
  • 1 tablespoon Fresh yeast
  • 1 1/2 teaspoons Castor sugar (caster sugar)
  • 1 teaspoon Salt
  • as required Oil
  • 3 tablespoons Maple syrup
  • 1/2 teaspoon Baking soda
  • 2 tablespoons White sesame seeds
  • 2 tablespoons black sesame seeds (kale til)
  • 2 tablespoons Poppy seeds (khuskhus/posto)
  • 2 tablespoons Garlic flakes
  • 2 tablespoons Onion flakes
  • as required Milk wash
  • to serve Cream cheese
  • to serve Honey

Method

  1. Take yeast in a bowl, add ½ tsp castor sugar and 3-4 tbsps warm water and mix well. Set aside for 5 minutes to activate.
  2. Sieve refined flour into another bowl, add 1 tsp salt, 1 tsp castor sugar and mix well.
  3. Make a well in the centre, add the activated yeast and 1½ cups water, mix well and knead into soft dough.
  4. Grease the same bowl with oil, place the dough in it, cover with cling wrap and set aside to prove for 10-15 minutes
  5. Preheat the oven at 180˚C. Line a baking tray with parchment paper, spray oil and set aside.
  6. Knock back the dough and divide into equal portions of 65 grams each. Shape each of them into balls and make a hole in the centre to shape like bagels. Place them on the baking tray, spray some oil over them and cover with cling wrap set them aside to prove for 10-15 minutes.
  7. Heat sufficient water in a non-stick deep pan, add maple syrup and baking soda and let it come to a boil.
  8. Gently add the bagels and poach for 60 seconds on each side, drain and place it on wire rack to cool slightly.
  9. Take white sesame seeds in a bowl, add black sesame seeds, poppy seeds, garlic flakes and onion flakes and mix well.
  10. Brush the poached bagels with milk and sprinkle some sesame mixture and sea salt on each bagel. Place the wire rack on a baking tray, keep the rack in the preheated oven and bake for 15-20 minutes.
  11. Halve a bagel horizontally, spread some cream cheese on the base half and drizzle honey on it. Cover with the top half and place on a serving plate. Place the other bagels on the serving plate and serve with cream cheese and honey.
