Bajra Wada

A traditional Gujarati snack made from bajra flour and a blend of spices. They’re perfect for enjoying with green chutney and a steaming cup of masala chai. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 1½ cups pearl millet flour (bajra flour)
  • ½ cup yogurt
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • ¾ teaspoon coriander powder
  • 1 teaspoon white sesame seeds
  • 1 tablespoon freshly chopped coriander
  • Salt to taste
  • 2 green chillies chopped
  • Oil for deep frying
  • Tomato ketchup to serve

Method 

  1. Take bajra flour in a bowl. Add yogurt, turmeric powder, red chilli powder, coriander powder, white sesame seeds, chopped coriander, salt and green chillies. Add sufficient water and knead into a dough.
  2. Divide dough into equal portions and shape each portion into medium sized tikkis and slightly flatten them.
  3. Heat sufficient oil in a kadai, add the discs and deep fry on medium heat till nice and crisp. Drain on an absorbent paper.
  4. Serve hot with tomato ketchup.
