By Sanjeev Kapoor 02 Sep 2016 in Recipes Veg New Update " frameborder="0" allowfullscreen> Main Ingredients Baby potatoes, Lemon juice Cuisine Spanish Course Main Course Vegetarian Prep Time 6-10 minutes Cook time 31-40 minutes Serve Taste Mild Level of Cooking Easy Others Veg Ingredients 10-12 baby potatoes, cut into halves with skin 1 tablespoon lemon juice 1/4 cup mayonnaise 2 tablespoons olive oil Salt to taste 1/2 teaspoon paprika powder 1 teaspoon crushed black peppercorns 8-10 garlic cloves, chopped 1 teaspoon fresh thyme 1/4 teaspoon grated lemon zest Thyme sprig for garnishing Method Preheat oven to 180°C. Combine baby potatoes, olive oil, salt, paprika powder, ½ teaspoon crushed peppercorns, garlic, thyme in a bowl and mix well. Set aside for 10 minutes. Place the baby potatoes mixture on a baking tray and put the tray in the preheated oven. Bake for 15-20 minutes. Remove from heat and set aside. To make lime mayonnaise, combine mayonnaise, lemon juice, lemon zest, salt and remaining crushed peppercorns in another bowl and mix well. Refrigerate for 10 minutes. Place the baked potatoes in a serving dish. Garnish with a thyme sprig and serve hot with lime mayonnaise.
