  • to taste Black pepper powder
  • 1 teaspoon Lemon rind grated
  • 1 teaspoon Orange rind grated
  • 2 tablespoons Fresh orange juice
  • 4 tablespoons Cream
  • a few Fresh basil leaves

Method

  1. Preheat oven to 180°C. Generously grease a large baking dish with melted butter. Tear a few of the basil leaves with hand.

  3. Bake in the preheated oven until the fish flakes easily when tested with a fork. It should take about ten to twelve minutes. Transfer the fish to a warm platter.
  4. Strain the juices from the baking tray into a small pan. Stir in the cream and hand torn basil. Bring to a slow boil and continue to cook till it thickens.
  5. Remove from heat. Pour the citrus cream over the warm fish fillets. Garnish with fresh basil sprigs and serve.
