Banana Biscuits

Ingredients list for Banana Biscuits

  • 3 large Ripe bananas
  • 1½ cups Refined flour (maida)
  • + for greasing Butter 1 cup
  • 1 cup Castor sugar (caster sugar)
  • 1 teaspoon Baking powder
  • ½ cup Desiccated coconut
  • ½ cup Rolled oats
  • for garnishing Walnuts
  • to sprinkle brown sugar/jaggery

Method

  1. Preheat oven at 220ºC. Grease a baking tray with some butter.
  2. Cream together butter and castor sugar in a bowl with an electric blender till fluffy and smooth.
  3. Peel and mash bananas and add to the bowl. Mix well.
  4. Sift together flour and baking powder in the bowl. Add coconut and oats and mix well.
  5. Divide the mixture into equal portions and place on the greased tray in the shape of cookies. Place a walnut on each cookie and sprinkle some brown sugar on top.
  6. Put the tray in the preheated oven and bake for 10-15 minutes.
  7. Remove from heat, cool to room temperature and serve.
