By Sanjeev Kapoor 09 Mar 2017 in Recipes Course New Update Main Ingredients Ripe bananas, Desiccated coconut Cuisine Fusion Course Snacks and Starters Prep Time 51-60 minutes Cook time 51-60 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Non Veg Ingredients list for Banana Coconut Loaf 3 large Ripe bananas peeled and mashed 2 cups Desiccated coconut ½ cup + for greasing Butter ½ cup Honey 1 cup + for dusting Refined flour (maida) 1 teaspoon Baking powder 4 Eggs Zest of 2 lemons to taste Salt Method Preheat oven to 180°C. Grease a loaf tin with some butter and dust with some flour. Heat a non-stick pan. Add honey and butter, mix and let the butter melt. Transfer into a bowl. Add bananas, desiccated coconut, flour, baking powder, melted honey-butter mixture, eggs, lemon zest and salt and mix till well combined. Pour the prepared mixture into the lined tin, place the tin in the preheated oven and bake for 1 hour. Remove from oven, cool and demould.
