Ingredients list for Banana and Walnut Muffins
- 2 Banana
- 50 grams Walnuts
- 150 grams Whole wheat flour
- 50 grams Butter
- 50 grams Sugar
- 1 Egg
- 1 tablespoon Baking powder
- 50 grams Oats flour
- 200 millilitres Milk
- 1 tablespoon Oats
Method
- Preheat oven at 180ºC.
- Crush walnuts coarsely and transfer into a bowl.
- Peel, break bananas and place in a crusher. Crush finely.
- Cream butter and sugar in another bowl till light. Add crushed bananas and mix well. Add egg and mix well till smooth.
- Sift together wheat flour and baking powder into the bowl and fold nicely.
- Add oats flour, milk and mix well till well blended into a smooth batter. Add half the crushed walnuts and mix well.
- Pour batter into individual silicon muffin moulds, tap a little and place in a baking pan.
- Add oats to the remaining crushed walnuts and mix well. Top the muffin batter with it, place pan in the preheated oven and bake for 25-30 minutes.
- Remove from heat, cool and demould. Serve.
