Batata Bhajiya

Ingredients 

  • 4 medium potato unpeeled
  • 1½ cups gram flour (besan)
  • ½ teaspoon red chilli powder
  • ½ teaspoon turmeric powder
  • ¼ teaspoon carom seeds (ajwain)
  • Salt to taste 
  • Oil for deep-frying
  • Chaat masala to sprinkle
  • Date and tamarind chutney to serve
  • Green chutney to serve

Method

  1. Take gram flour in a large bowl, add red chilli powder, turmeric powder, carom seeds, salt and sufficient water and whisk to make a semi-thick batter of coating consistency.
  2. Heat sufficient oil in a kadai.
  3. Slice the potatoes, using a slicer, directly into the batter and mix till all of them are well coated.
  4. Slide in each slice into the hot oil and deep-fry till golden and crisp. Drain on absorbent paper.
  5. Transfer them onto a serving plate and sprinkle chaat masala on top. Serve hot with date and tamarind chutney and green chutney.
