Batata Nu Shaak

A simple potato dish cooked in a typical Gujarati style. Potatoes tempered and cooked with Indian spices. This is a Sanjeev Kapoor exclusive recipe.

Batata Nu Shaak

Ingredients 

  • 5 medium potatoes, peeled, and cut into 1 inch cubes
  • 2 tablespoons oil + to deep fry 
  • 2 tablespoons white sesame seeds
  • 1/2 teaspoon turmeric powder
  • 3 teaspoons coriander powder
  • 1 teaspoon red chilli powder
  • Salt to taste
  • 1 teaspoon sugar
  • 1/4 cup chopped coriander leaves 
  • 1 tablespoon lemon juice
  • Coriander sprig for garnish

Method

  1. Heat sufficient oil in a deep pan, slide in the potato cubes in 2 batches, and deep-fry till light golden and crisp. Drain on absorbent paper.
  2. Heat 2 tbsps oil in a non-stick pan, add white sesame seeds and saute till the seeds change colour. Add the fried potatoes and mix well on high heat.
  3. Add turmeric powder, coriander powder and red chilli powder, reduce heat and mix well. Add salt and sugar and mix well.
  4. Switch the heat off, add coriander leaves and lemon juice and mix well.
  5. Transfer to a serving bowl, garnish with coriander sprigs and serve hot.
