History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Besan Egg Chilla Recipe

  • Gram flour (besan) 2 cups

  • Egg 8

  • Salt to taste

  • Red chilli powder 1/2 tablespoon

  • Onion chopped 3 medium

  • Green chilli chopped 3

  • Fresh coriander leaves 2 tablespoons

  • Oil as required

  • Mint chutney as required

Method

Step 1

Put the gram flour in a bowl. Add salt, red chilli powder and water, little by little, and whisk till you get a smooth batter of dropping consistency.

Step 2

Rest the batter for a while. Chop onions and green chillies finely and put in another bowl. Break the eggs and add and whisk well.

Step 3

Chop coriander leaves and add along with salt and whisk again. Heat a non stick tawa. Put a little oil on a tissue paper and rub the tawa.

Step 4

Pour a ladle full of gram flour and spread all around the tawa. Spread a little mint chutney over it. Put a little egg mixture and spread. Drizzle a little oil all around and rotate the tawa.

Step 5

When the underside becomes golden, fold into half and serve hot with green chutney or tomato ketchup.
