Ingredients
- 250 gms ladyfingers, trimmed and slit vertically without cutting through
- 1 tablespoon coriander seeds
- 10-15 black peppercorns
- 1 tablespoon fennel seeds
- 1 teaspoon cumin seeds
- 1 tablespoon white sesame seeds
- 3 dried red chillies, stems removed
- 2 medium onions, peeled, cut into 1 inch cubes and layers separated
- ½ teaspoon turmeric powder
- Salt to taste
- ½ teaspoon red chilli powder
- 2 tablespoons oil
- Fresh coriander sprig for garnish
Method
- Take coriander seeds, black peppercorns, fennel seeds, cumin seeds, white sesame seeds and break dried red chillies in a blender. Blend to a fine powder.
- Take bhindis in a bowl and stuff them with some of the blended masala. Add onion, remaining blended powder, turmeric powder, salt and red chilli powder. Mix well.
- Heat oil in a deep non-stick pan, add the bhindis and mix well. Cook on medium heat for 8-10 minutes or till the bhindis get cooked, stirring occasionally.
- Serve hot, garnished with coriander sprig.
