Bharwan Bhindi Masala

Ladyfingers stuffed with a flavourful masala and sautéed to give a delicious side dish. This tastes best with hot phulkas. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 250 gms ladyfingers, trimmed and slit vertically without cutting through
  • 1 tablespoon coriander seeds
  • 10-15 black peppercorns
  • 1 tablespoon fennel seeds 
  • 1 teaspoon cumin seeds 
  • 1 tablespoon white sesame seeds 
  • 3 dried red chillies, stems removed
  • 2 medium onions, peeled, cut into 1 inch cubes and layers separated
  • ½ teaspoon turmeric powder
  • Salt to taste
  • ½ teaspoon red chilli powder
  • 2 tablespoons oil
  • Fresh coriander sprig for garnish

Method

  1. Take coriander seeds, black peppercorns, fennel seeds, cumin seeds, white sesame seeds and break dried red chillies in a blender. Blend to a fine powder.
  2. Take bhindis in a bowl and stuff them with some of the blended masala. Add onion, remaining blended powder, turmeric powder, salt and red chilli powder. Mix well.
  3. Heat oil in a deep non-stick pan, add the bhindis and mix well. Cook on medium heat for 8-10 minutes or till the bhindis get cooked, stirring occasionally. 
  4. Serve hot, garnished with coriander sprig.
