Ingredients
- 2 cups corn kernels (makai)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 4-5 garlic cloves
- 1 large onion, sliced
- 4 cups vegetable stock
- Salt to taste
- Crushed black peppercorns to taste
- 1 tablespoon chopped fresh coriander leaves
Method
- Heat oil and butter in a deep non-stick pan. Add garlic and onions, mix and sauté till onions turn golden brown.
- Add corn kernels and mix. Add vegetable stock and stir to mix. Add salt and crushed peppercorns, mix, cover and simmer till corn kernels are tender.
- Blend smoothly, strain into another pan on heat and heat.
- Add coriander leaves, salt and crushed peppercorns, mix well and simmer for 2 minutes.
- Sprinkle some crushed peppercorns and serve hot.
