Ingredients

  • 4 eggs
  • 1 small onion, chopped
  • 1 medium potato, boiled, peeled and cut into small cubes
  • 2 green chillies, chopped
  • Crushed black peppercorn to taste
  • ¼ teaspoon turmeric powder
  • ½ teaspoon red chilli powder
  • Salt to taste
  • 2 tablespoons grated processed cheese 
  • 1 tablespoon chopped fresh coriander leaves 
  • 6-8 cherry tomatoes

Method 

  1. Preheat the oven to 160º C
  2. Break eggs into a bowl.  Add onion, potato, green chillies, crushed black peppercorns, turmeric, red chilli powder, salt, cheese, coriander leaves and whisk well.
  3. Pour the mixture into silicon moulds, place 2 cherry tomatoes on each mould and bake it in a preheated oven for 10 -15 minutes.  
  4. Remove the moulds from the oven, cool, demould and pack them in the tiffin.
