Ingredients list for Bhurji Pav - SK Khazana

  • 6 Eggs
  • 8 Pavs
  • 2 tablespo teaspoons Oil
  • 2 Medium onions finely chopped
  • 2 Green chillies finely chopped
  • 2 Medium tomatoes finely chopped
  • 1 1/2 teaspoons Red chillies powder
  • 2 teaspoons Cumin powder
  • 2 teaspoons Coriander powder
  • 1/2 teaspoon Turmeric powder
  • to taste Salt
  • 4 tablespoons Milk
  • 2 tablespo to garnish Fresh coriander leaves finely chopped
  • 2 tablespoons Butter

Method

  1. Heat 2 tablespoons oil in a non-stick pan, add onions and saute till translucent. Add green chillies
    and sauté till onions turn a light golden.
  2. Break eggs into a bowl and beat well.
  3. Add tomatoes to sautéed onions and sauté till soft. Add chilli powder, cumin powder, coriander powder, turmeric powder and salt and sauté till tomatoes become soft.
  4. Add milk to beaten eggs and beat well. Pour the egg mixture into the pan, mix continuously till they get scrambled and are done. Add coriander leaves and mix well.
  5. Heat butter and remaining oil in another non-stick pan.
  6. Slit the pavs keeping one side intact, place them in the pan, with cut side downwards, and toast turning sides till both sides are light golden brown.
  7. Transfer bhurji into a serving bowl, garnish with a coriander sprig and serve hot with toasted pavs.
