Blooming Onions

An appetizer made by cutting a whole onion into a flower shape, coating it in a seasoned batter, and deep-frying it to a crispy golden brown, resulting in a crunchy, savory, and addictive treat. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 4-8 medium onions
  • 2 cups refined flour (maida)
  • Salt to taste 
  • ½ teaspoon dried thyme
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • 1 tablespoon paprika
  • Black pepper powder to taste
  • 1 cup milk
  • 2 eggs
  • 2 tablespoons malt vinegar
  • Oil for deep-frying 

Method 

  1. Mix together flour, salt, cayenne, paprika, thyme, oregano, onion powder, garlic powder, salt and pepper powder in a bowl.
  2. Whisk together milk, eggs, vinegar, pepper powder and salt in another bowl. 
  3. Make 8 slits on the onions without cutting through. Separate the layers to create flowers. 
  4. Dust the onion flowers with the flour mixture and dip in the milk mixture. Refrigerate for 10-15 minutes. 
  5. Heat sufficient oil in a kadai. Deep-fry the onions till golden brown and crisp. Drain on absorbent paper. 
  6. Serve hot with green mayonnaise and tomato ketchup.
