Blueberry Avocado Smoothie Avocado, mango, kiwi and pineapple mixture topped with blueberry and coconut mixture to make a colourful smoothie. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 13 Feb 2017 in Recipes Course New Update Main Ingredients Blueberries, Avocado Cuisine Fusion Course Beverages Prep Time 6-10 minutes Cook time 0-5 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Blueberry Avocado Smoothie 1 cup Blueberries fresh 1 Avocado 1 cup Ripe mango chopped 2 medium Kiwi roughly chopped ½ cup Pineapple juice as required Ice cubes ½ cup Coconut milk for garnishing Fresh mint sprigs Method Halve the avocado, scoop out the flesh and put into a blender jar. Add mango, kiwi, pineapple juice and some ice cubes to a smooth mixture. Pour avocado mixture into individual glasses till ¾ full. Blend together coconut milk, blueberries and some ice cubes to a smooth mixture and pour on top of avocado mixture filling the glasses.
