Ingredients list for Blueberry Buttermilk Cup Cakes

  • as required Blueberry jam
  • 1 cup Buttermilk
  • 3/4 cup Butter
  • 1 1/3 cups Sugar
  • 4 Eggs
  • 2 teaspoons Vanilla essence
  • 2 cups Refined flour (maida)
  • 1 1/2 teaspoons Baking powder
  • 1/2 teaspoon Baking soda
  • 1 teaspoon Lemon rind grated
  • 1 teaspoon Orange rind grated

Method

  1. Preheat oven to 180°C. Cream butter in a bowl. Add sugar and beat with a hand blender. Break 1 egg at a time, add and beat.
  2. Add vanilla essence and continue to beat.
  3. Sift refined flour, baking powder and baking soda into the bowl and mix well.
  4. Add buttermilk and mix. Add lemon rind and orange rind and mix.
  5. Arrange small silicon moulds on a baking tray. Pour the batter into the moulds till half full.
  6. Top with ½ tsp blueberry jam.
  7. Pour some more batter over the jam and pat the tray on the worktop to level the surface.
  8. Put ½ tsp jam on top of batter. Keep the tray in the preheated oven and bake for 20-25 minutes.
  9. Check to see if it is done. Cool and serve.
