Ingredients list for Boondi Trifle Custard

  • 4 Boondi Laddoos
  • 3 tablespoons Vanilla custard powder
  • 2 cups Milk
  • 1 tin Mixed fruit cocktail
  • ½ eight inch Sponge cake
  • 4 teaspoons Sugar syrup
  • 6 tablespoons Rabdi
  • 4 Fresh mint leaves

Method

  1. Put custard powder in a bowl, add milk and whisk till smooth. Pour into a non-stick pan and cook, stirring continuously, on medium heat till thick. Switch off heat, transfer into a bowl. Add fruit cocktail along with the syrup and mix well.
  2. Put one boondi laddoo in each for 4 serving glass cups and crumble them. Break the cake into small pieces and put over the laddoos.
  3. Drizzle 1 tsp sugar syrup over the cake pieces. Top with the custard-fruits mixture.
  4. Finally put 1½ tbsps. rabdi over the custard mixture in each cup.
  5. Garnish with a fresh mint leaf and serve.
