This recipe is from FoodFood TV channel By Sanjeev Kapoor 29 Jul 2015 in Recipes Course New Update Main Ingredients Brinjal, Dried red chillies Cuisine Fusion Course Soups Prep Time 11-15 minutes Cook time 11-15 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Veg Ingredients list for Brinjal and Smoked Chilli Soup 1 Brinjal Roasted and peeled 5 Dried red chillies 2 tablespoons Olive oil 1 cup Vegetable stock 1 cup Fresh cream to taste Salt 4 tablespoons Butter 1 tablespoon Extra virgin olive oil for garnish for garnish Fresh coriander leaves Method Chop roasted brinjals and grind into a smooth paste. Heat olive oil in a non-stick pan, add dried red chillies and sauté till light brown. Drain the red chillies and keep them aside. Add the brinjal paste to the pan and sauté for a minute. Add vegetable stock and whisk well. Add cream, salt and butter and boil for a minute. Add 1 tbsp extra virgin olive oil and mix well. Cut the sautéed red chillies into thin long strips. Transfer the soup into a serving bowl. Garnish with coriander leaves, little virgin olive oil and sautéed chilli strips.
