By Sanjeev Kapoor 26 Mar 2021 in Recipes Course New Update Main Ingredients Refined flour, Fresh yeast Cuisine Fusion Course Breads Prep Time 1-1.30 hour Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Burger Buns 4 cups Refined flour 4 teaspoons Fresh yeast 4 teaspoons Castor sugar 1 teaspoon Salt 4 teaspoons Milk powder 2/3 cup Milk 2 tablespoons Butter to grease Oil as required Milk wash to sprinkle White sesame seeds to sprinkle Black sesame seeds to apply Melted butter Method Take yeast in a bowl, add ½ tsp castor sugar, 1 tbsp warm water, mix well and set aside for 15 minutes to activate Sift refined flour in a planetary mixer bowl, add salt, milk powder and remaining castor sugar and mix well. Make a well in the centre, add the yeast mixture and milk. Attach the bowl to the main body of the mixer and mix at slow speed. Add a little water and process into soft dough. Add butter and process again till well incorporated to make a smooth dough. Sprinkle flour on worktop and knead the dough well. Shape it into a smooth round ball. Grease a bowl with oil and transfer the dough into it. Cover with a moist muslin cloth and set aside to prove for 20-25 minutes. Take a rectangular sheet of aluminium foil, fold into 3 big folds, and make 4 smaller folds, fold the remaining side. Make a thin strip. Wrap the aluminium strip around a cookie cutter to shape into ring and fix the 2 ends with pins to form a ring. Separate it from the cookie cutter. Make 2 more rings similarly. Spray a little oil on the worktop, place the dough on it and knockback. Divide the dough into 3 equal portions of 140 grams each. Shape each portion into a ball. Spray a little oil on a baking tray with oil, place the aluminium rings on it and place the dough balls into each of the rings. Cover with a moist muslin cloth and set aside to prove for 10-15 minutes. Preheat the oven to 180˚C. Brush milk wash on the buns and sprinkle black and white sesame seeds on top. Keep the tray in the preheated oven and bake for 15-20 minutes. Bring the tray out of the oven, remove the aluminium foil rings and place the buns on a serving platter. Apply butter on top of buns.
