Coastal cuisine of India loves the coconut. Be it Goan or Malwani, Karnatak, Tamilian or from Kerala, the taste of coconut reigns supreme. Think about a rich fish curry and try making it obliterating the coconut! It will pass off as a fake. Very correctly termed as the ‘plant of life,’ each and every part of the coconut plant is useful in one or the other way.

Ingredients for COCONUT AND LIME ICE CREAM Recipe

  • Fresh coconut scraped 1/4 cup

  • Coconut milk powder 1 tablespoon

  • Lemon zest 1

  • Vanilla ice cream cut into 1 inch cubes 1 litres

  • Honey 2 tablespoons

  • Fresh mint sprigs to garnish

Method

Step 1

Put vanilla ice cream cubes, coconut, coconut milk powder and honey in a blender jar. Grate zest of ½ lemon into the jar, cover it and blend till smooth.

Step 2

Transfer into an air-tight container, cover and freeze for 4-5 hours or till set.

Step 3

Scoop out ice cream and put into individual stemmed bowl. Grate some lemon zest on top of the ice cream scoops and serve immediately garnished with mint sprig.
