Ingredients list for Carrot Walnut Dip - SK Khazana

  • 2-3 Small carrots peeled and cut into small cubes
  • 1/2 cup Walnuts chopped
  • 1 tablespoon Oil
  • 3/4 cup Split red lentils (masoor dal) parboiled
  • 1 teaspoon Black peppercorns crushed
  • 6-7 Garlic cloves
  • 1 tablespoon Tahini
  • 1 1/2 teaspoons Coriander powder
  • to taste Salt
  • 1/4 cup Fresh parsley chopped
  • 1 tablespoon Lemon juice
  • 2 1/.2 tablespoons Olive oil
  • 1 to garnish Fresh parsley sprig

Method

  1. Heat oil in a non-stick pan, add carrots and sauté for 2-3 minutes. Add walnuts and cook till carrots soften.
  2. Transfer the cooked mixture into a blender jar along with red lentils, black pepper, tahini, garlic cloves, coriander powder, salt, parsley, lemon juice and ½ tablespoon olive oil and grind.
  3. Add ¼ cup red lentils water and continue to grind.
  4. Transfer into a serving bowl, pour 2 tablespoons olive oil, garnish with parsley sprig and serve.
