Ingredients 

  • 2 cups grated cauliflower
  • 1½ cups quinoa flour
  • Salt to taste     
  • Crushed black peppercorns to taste
  • 4 eggs
  • 80 grams parmesan cheese 
  • 4 tablespoons olive oil
  • 8-10 button mushrooms
  • 2 chicken sausages
  • 400 grams fresh mozzarella cheese
  • ½ cup pizza sauce 
  • 8-10 fresh basil leaves + for garnish

Method 

  1. Take cauliflower in a large bowl, add salt, crushed black peppercorns and quinoa flour. Break the eggs and add and mix well.
  2. Grate parmesan cheese into the bowl and mix till well combined. Add a little water and mix well.
  3. To make each pizza, heat 2 tablespoons oil in a shallow non-stick pan, add a portion of the mixture and spread it evenly to form a thick disc.  Cook on medium heat till the base is cooked completely. 
  4. Meanwhile, slice button mushrooms, chicken sausages and fresh mozzarella cheese.
  5. Flip and cook the other side of the pizza base till golden brown and crisp.
  6. Spread some pizza sauce over the cauliflower base, place some mushroom slices and chicken sausage slices on top, sprinkle salt and crushed black peppercorns over them.
  7. Arrange some cheese slices on top and place a few fresh basil leaves on top. Drizzle a little pizza sauce on top, cover and cook till the cheese melts. Repeat the process with the remaining ingredients.
  8. Garnish with fresh basil leaves. Cut into wedges and serve hot.
