Ingredients list for Chawal Ki Kheer - SK Khazana

  • 3/4 cups Rice washed, soaked and drained
  • 2 litres Milk
  • 8-10 cahew nuts
  • 8-10 almonds
  • 3 green cardamoms
  • 1/2 cup sugar
  • 2 tablespoons muskmelon seeds
  • 2 tablespoons raisins
  • A few saffron strands soaked in 1 tsp water

Method

  1. Roughly chop cashewnuts and almonds. Open green cardamom pods.
  2. Pour milk into a deep pan and bring it to a boil. Reduce heat and keep cooking till it is reduced to half.
  3. Add rice, mix well and cook on medium heat, stirring continuously, for 15-20 minutes or till the rice is almost cooked.
  4. Add sugar and mix till sugar dissolves and further cook for 1-2 minutes. Add green cardamoms, chopped nuts, melon seeds and raisins and mix well. Cook for 1-2 minutes.
  5. Add saffron water, mix and reduce the heat to low and cook till mixture thickens.
    Transfer into serving bowl and serve.
