Ingredients list for Cheese Sauce

  • 75 grams Cheddar cheese slab
  • 1/2 cup Processed cheese , grated
  • 2-3 tablespoons Refined flour (maida)
  • 2 cups Milk
  • 1 Bay leaf
  • 1 Onion layer
  • 1 Clove
  • 2-3 tablespoons Butter
  • to taste Salt
  • to taste Black peppercorns , crushed
  • to garnish Black and green olive slices
  • to serve Nachos

Method

  1. To prepare cheese sauce, heat milk in a non-stick pan. Add bay leaf and 2 layers of quartered onion with a clove and bring the mixture to a boil. Remove onion and bay leaf from milk and set aside.
  2. Heat butter in another non-stick pan. Add refined flour, mix well and sauté for 2-3 minutes, making sure that the flour doesn’t change colour. Add half the flavoured milk and mix well to make a thick paste. Add remaining milk and mix further to make sure there are no lumps.
  3. Grate the slab of cheddar cheese into the pan and whisk well till the cheese melts. Add grated processed cheese and mix well.
  4. Add salt and crushed peppercorns and mix. Remove from heat.
  5. Transfer into a serving bowl, garnish with olive slices and serve with nachos.
