Ingredients 

  • 50 grams processed cheese
  • 25-30 spinach leaves, blanched, drained thoroughly, cooled and chopped
  • ½ cup American corn kernels, boiled
  • 8 white bread slices
  • 2 tablespoons butter
  • 2 tablespoons refined flour (maida)
  • 1 cup milk
  • Salt to taste
  • Black peppercorns crushed to taste
  • Olive oil for drizzling
  • Red capsicum curls to garnish
  • Microgreens to garnish

Method

  1. Heat butter in a non-stick pan till it melts. Add refined flour, mix and saute for 2-3 minutes or till the colour changes to a light golden.
  2. Add milk, a little at a time, stir well so that there are no lumps and cook till the sauce thickens.
  3. Add corn kernels and spinach and mix well. Add salt and crushed black peppercorns and mix well.
  4. Transfer the mixture into a bowl and stir well. Grate processed cheese into the bowl and mix well.
  5. For each sandwich, spread the mixture generously on one bread slice and cover it with another slice.
  6. Heat a sandwich griller. Drizzle a little oil over each sandwich and place it in the griller, close it and grill till they are golden and grill marks appear on both sides.
  7. Cut each sandwich into 2 equal pieces, place them on a serving platter, garnish with red capsicum curls and microgreens and serve hot.
