Combine cheese, pineapple and cherries in a bowl and mix well. Tear mint leaves and add. Mix well. Mix flour with little water to make a thick paste. Place samosa pattis on a worktop and dampen with some water. Place a portion of prepared mixture on one end, apply flour paste on the edges and roll into cigars. Deep-fry the cigars till golden and crisp. Drain on an absorbent paper. Serve hot garnished with a mint sprig.
