Ingredients

  • ¾ cup boiled and shredded chicken
  • 8 white bread slices
  • ¼ medium cabbage, shredded
  • ½ medium carrot, peeled and cut into thin strips
  • ½ medium green capsicum, seeded and cut into thin strips
  • Crushed black peppercorns to taste
  • A pinch of sugar
  • Salt to taste
  • 3 tablespoons mayonnaise
  • Butter for applying
  • Potato chips to serve
  • Tomato ketchup to serve
  • Fruit juice to serve

Method

  1. Take chicken, cabbage, carrot, green capsicum, crushed black peppercorns, sugar, salt and mayonnaise in a bowl. Mix well.
  2. Take white bread slices on a worktop and cut into roundels with a cookie cutter. Apply butter on a roundel and add mixture. Cover on top with another roundel. 
  3. Serve immediately with potato chips, tomato ketchup and fruit juice.
