Ingredients list for Chicken Veggie Wrap - SK Khazana

  • 2 Boneless chicken breasts
  • a few Iceberg lettuce leaves
  • as required Purple cabbage shredded
  • 1 Small cucumber peeled and cut into thin slices
  • 2-3 Pickled gherkins thinly sliced
  • 2-3 Pickled jalapenos sliced
  • 4 Tortillas roasted
  • 2 tablespoons + for grilling Olive oil
  • to taste Salt
  • to taste Black peppercorns crushed
  • 2 teaspoons Dried mixed herbs
  • for drizzling Mustard mayonnaise
  • 1 Medium avocado

Method

  1. Put chicken breasts in a bowl. Add olive oil, salt, crushed peppercorns and mixed herbs, rub well and set aside to marinate for 10-15 minutes.
  2. Heat some olive oil in a non-stick grill pan. Place marinated chicken breasts on it and grill till evenly done form both the sides and chicken is cooked. Remove from heat and shred.
  3. Put some shredded lettuce onto tortillas. Top with a portion of shredded chicken and drizzle some mayonnaise.
  4. Top with cabbage, cucumber slices, gherkin slices and jalapeno slices. Sprinkle salt and crushed peppercorns.
  5. Halve avocado, scoop out flesh and place on each tortilla. Drizzle some more mayonnaise on top.
  6. Warp and serve immediately.
