Chicken Yakitori

A Japanese delicacy – skewered boneless chicken cubes, mushrooms, capsicum and spring bulbs grilled with yakitori sauce. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Chicken Yakitori

  • 300 grams Chicken breasts cut into medium-sized cubes
  • 1 cup Rice wine
  • 4 tablespoons Soy sauce
  • 1 tablespoon Ginger grated
  • 1 teaspoon Sugar
  • 5-6 Satay sticks soaked in water for an hour and drained
  • 5 Button mushrooms halved
  • 1 Red capsicum cut into ½ inch pieces
  • 3-4 Spring onion bulbs halved
  • for brushi Oil

Method

  1. To make yakitori sauce, heat rice wine in a non-stick pan, add soy sauce, ginger, salt and sugar and mix well. Cook till the mixture thickens.
  2. Skewer onto the satay sticks in the following order: mushroom, chicken cube, 2 capsicum pieces, chicken and spring onion bulb. Similarly prepare the rest. Drizzle some of the sauce over it.
  3. Heat a non-stick grill pan, brush with some oil, place the prepared satay sticks on it, drizzle some more sauce on it. Cook till the grill marks appear underside, flip and drizzle some more sauce reserving some for the serving and cook on the other side for 6-7 minutes.
  4. Serve hot with the reserved sauce.
