Chocolate Cupcakes with Raspberry Frosting These chocolate cupcakes are topped with a raspberry flavoured whipped cream This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 11 Mar 2020 in Recipes Course New Update Main Ingredients Cupcakes, Dark chocolate Cuisine Fusion Course Desserts Prep Time 31-40 minutes Cook time 21-25 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Non Veg Ingredients list for Chocolate Cupcakes with Raspberry Frosting Cupcakes 3/4 cup Dark chocolate melted 1/4 cup + tablespoons Cocoa powder 3/4 cup + tablespoons Refined flour 1/4 cup Butter 1 cup Granulated sugar 1/2 cup Sour cream 1 Egg yolk 1 teaspoon Vanilla essence 1 Egg 3/4 teaspoon Baking powder 1/4 teaspoon Salt Frosting 2-3 tablespoons Raspberry crush 1 cup Whipped cream Method Preheat oven at 180° C. Take butter and sugar and beat with a hand blender till light. Add sour cream, egg yolk and vanilla essence and beat well. Add egg and beat again. Add melted chocolate and beat well. Add flour, cocoa powder, baking powder and salt and beat till the mixture is smooth. Transfer the batter in a piping bag. Snip off the end of the piping bag and pipe out the batter into individual cupcake moulds till they ¾ filled. Keep the moulds on a baking tray, keep the tray in the preheated oven and bake for 20-25 minutes. Remove from oven, let them cool completely. To make the frosting, take whipped cream in another bowl, add raspberry crush and mix well. Fill the frosting in a piping bag.
