Chocolate Rice Pudding Delicious pudding made with rice and chocolate This recipe is from FoodFood TV channel By Sanjeev Kapoor 06 Aug 2014 in Recipes Course New Update Main Ingredients Cocoa powder, Short grain Rice Cuisine British Course Desserts Prep Time 11-15 minutes Cook time 51-60 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Non Veg Ingredients list for Chocolate Rice Pudding 2 tablespoons Cocoa powder 5 tablespoons Short grain Rice 3 cups Milk 1 Bay leaf 4 Eggs 2 tablespoons Sugar 4 tablespoons Brown sugar 1/2 teaspoon Vanilla essence 50 grams White chocolate roughly chopped 225 millilitres Fresh cream a few Orange peel thin strips Method Heat milk in a deep non stick pan. Add bay leaf and rice and cook till the rice is soft. Meanwhile heat sufficient water in another deep non stick pan.Break 4 eggs and separate yolks and whites and put in separate bowls. Whisk the yolks, add sugar, 2 tbsps brown sugar and cook, stirring continuously, over hot water in the second pan kept over medium heat. Cook till the mixture thickens and coats the back of a spoon. Add cocoa powder and whisk so that it blends well. Add vanilla essence and mix. Once the rice is soft, discard the bay leaf and let it cool slightly. Add white chocolate to the custard in the bowl and mix well. Add cream and mix. Add the rice, little by little, and mix well. Pour the mixture into ramekin moulds and let them cool to room temperature. Keep them in a refrigerator to chill. Sprinkle some brown sugar and serve garnished with a few orange peel strips or you can also caramalise the sugar with a brulee torch.
