Ingredients list for Chocolate Sandwich Biscuits

  • For the dough
  • 4 tablespoons Cocoa powder
  • 1/3 cup Butter
  • 3/4 cup Powdered sugar
  • 1 1/2 cups Refined flour (maida)
  • 1 1/4 teaspoons Baking powder
  • a pinch Salt
  • 1/4 teaspoon Vanilla essence
  • 3 tablespoons Milk
  • to sprinkle Granulated sugar
  • For the icing
  • 1/4 cup Butter
  • 1 cup Icing sugar
  • 3 tablespoons Cocoa powder

Method

  1. To make the dough, take butter and powdered sugar in a bowl and beat till light and fluffy.
  2. Sift refined flour, baking powder, cocoa powder and salt directly in the same bowl and mix well. Add vanilla essence and milk and mix well to form a dough.
  3. Place a butter paper on the worktop, transfer the dough on it, cover with another piece of butter paper and roll out thinly.
  4. Cut into 1 inch × 3 inch rectangles and arrange them on a greased baking tray keeping a little distance between each. With the back of satay stick, make small holes at equal distance on each rectangle.
  5. Refrigerate for 10-15 minutes.
  6. Preheat the oven at 180° C.
  7. Place the tray in the preheated oven, sprinkle granulated sugar over the rectangles and bake for 7 minutes. Transfer the biscuits onto a wire rack and allow to cool down completely.
  8. Meanwhile, for the icing, take butter and icing sugar in another bowl and beat till light and fluffy. Add cocoa powder and mix till well combined.
  9. Apply the prepared icing evenly on half the biscuits, cover each of them with one of the remaining biscuits.
  10. Arrange the biscuits on a serving platter and serve. Or store in an airtight container to serve whenever needed.
