Chocolate and Coconut Soft Cake This soft cake has the wonderful flavour of chocolate and desiccated coconut. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 24 Feb 2017 in Recipes Course New Update Main Ingredients Dark chocolate, Desiccated coconut Cuisine Fusion Course Desserts Prep Time 41-50 minutes Cook time 21-25 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Non Veg Ingredients list for Chocolate and Coconut Soft Cake ½ cup Dark chocolate chopped, melted ¼ cup Desiccated coconut + for dusting Refined flour (maida) ? cup ¾ cup Icing sugar + for greasing Butter 8 tablespoons + 1 teaspoon 3½ Eggs ? cup Castor sugar (caster sugar) 1 teaspoon Vanilla essence Method Preheat oven to 180º C. Grease a round cake tin with some butter and dust with some flour. Cream together icing sugar and butter in a bowl till light. Sift flour into the mixture and fold in well. Beat together eggs and castor sugar in another bowl till fluffy. Add this to the butter-sugar-flour mixture and mix well. Add desiccated coconut and chocolate and mix. Add vanilla essence and mix till well combined into a batter. Pour the batter into the prepared tin, place the tin in the preheated oven and bake for 20-25 minutes. Remove from oven, cool and remove from the mould.
