Bihari cuisine is predominantly vegetarian because the traditional Bihari society, influenced by Buddhist and Hindu values of non-violence, does not eat eggs, chicken, fish and other animal products. However, there is also a section who relish meat and fish dishes which is common due to the number of rivers in Bihar.  Smoked food is one of the most remarkable thing about this cuisine.

Ingredients for Chokha Recipe

  • Large brinjal 1

  • Medium onions 1 1/2

  • Garlic cloves 1-2

  • Green chillies 4-5

  • Medium potatoes boiled and peeled 2

  • Salt to taste

  • Mustard oil 2-3 teaspoons

Method

Step 1

Roast brinjal on direct heat till the brinjal gets cooked and the skin charred.

Step 2

Finely chop onions, garlic and green chillies. Put potatoes in a bowl and mash with your fingers.

Step 3

Peel the roasted brinjal and mash along with the potatoes.

Step 4

Add onion, garlic, green chillies, salt and mustard oil and mix well.

Step 5

Transfer into a serving bowl and serve with litti.
